Su mam\u00e1 no ten\u00eda fuentes, pon\u00eda hojas de naranjo en el horno de barro y sobre eso apoyaba la masa para que no se quemen&#8221;, recuerda Hada Irastorza, coordinadora del equipo de Comunidad de la fundaci\u00f3n Conservation Land Trust (CLT) cuando conoci\u00f3 a Juana Canteros, una codiciada cocinera de San Miguel que prepara almuerzos y viandas para turistas que pasan por el camino de su casa para ir a San Nicol\u00e1s o la isla San Alonso.<\/p>\n<p>En eso consiste el trabajo del equipo de Comunidad de CLT y Fundaci\u00f3n Flora y Fauna Argentina, una fundaci\u00f3n cuyo objetivo es la reintroducci\u00f3n de fauna extinta en el Parque Iber\u00e1 y que adem\u00e1s trabaja con las comunidades y municipios vecinos a los Esteros para incentivar el desarrollo de prestadores tur\u00edsticos locales como una manera de frenar la migraci\u00f3n de los m\u00e1s j\u00f3venes y ganar aliados para la conservaci\u00f3n del ambiente. &#8220;El trabajo que hacemos desde el equipo de Comunidad es identificar qui\u00e9nes son los l\u00edderes de cada grupo, escucharlos y ver si ellos realmente tienen un inter\u00e9s en trabajar en el ecoturismo&#8221;, dice Hada y asegura: &#8220;Juanita es una de ellas&#8221;.<\/p>\n<p>La potencia de Iber\u00e1 a nivel tur\u00edstico est\u00e1 dada por ese ecosistema incre\u00edble pero tambi\u00e9n por la cultura. As\u00ed, por ejemplo, el paraje Carambola conserva la vida t\u00edpica del isle\u00f1o. Para ir de una casa a la otra hay que hacerlo en canoa, como si fuera una peque\u00f1a Venecia. Las casas son de junco porque el sustrato es arena entonces no podr\u00edan hacerse de otro modo.<\/p>\n<p>Raymundo Aguilar tiene 69 a\u00f1os y se destaca por ser el mejor constructor de canoas de San Miguel. &#8220;Hacer una canoa me lleva veinte d\u00edas&#8221;.<\/p>\n<p>&#8220;El acompa\u00f1amiento a emprendedores es clave.
